Crockpot Vegetarian Chili

Ingredients:

  • 2 cloves garlic, minced
  • 1 can (14-15 oz.) kidney beans, drained
  • 1 green bell pepper, chopped
  • 1 jalapeno pepper, chopped
  • 28 oz. can diced tomatoes
  • 1 tbsp. dried oregano
  • 1 tsp. salt
  • ½ tsp. black pepper

Directions:

  1. Combine all ingredients in crockpot.
  2. Cover and cook on low for 6-8 hours.

 

 

 

Sicilian potatoes

Ingredients:

  • 5 large potatoes, peeled and cubed
  • 2 onions, diced
  • 5 large tomatoes, diced
  • 1 cup of green olives
  • 5 tbsp of olive oil
  • 2 tbsp of salt
  • 1 tsp of pepper

Directions:

  1. Heat the oven to 350 degrees
  2. Mix all the ingredients together in a deep baking dish.
  3. Place the dish in the oven for 30-40 minutes.

Serves: 5-6 persons
