Tofu and Vegetable Bake


  • 3 zucchini, chopped
  • 2 carrots, chopped
  • 1 celery stalk, chopped
  • 1 onion, chopped
  • 1/2 cup of vegetable broth
  • 1 pack of tofu, cubed
  • 3 tbsp of olive oil
  • salt and pepper
  • 4 tbsp of Parmesan cheese


  1. Preheat oven to 350 degrees F.
  2. Add all the ingredients to a baking dish.
  3. Place the baking dish
  4. Cook in 350-degree oven for 15 minutes or until the broth bakes off.

Serves: 3 to 4 persons




Tofu Bruschetta


  • 4 Roma tomatoes, chopped
  • 2 tbsp. olive oil
  • 1 tbsp. balsamic vinegar
  • 2 tbsp. chopped basil
  • 1 yellow bell pepper, diced
  • 1 block tofu, diced
  • 2 tsp. garlic salt
  • 8 slices Italian bread, toasted


  1. Mix tomatoes, olive oil, vinegar, basil, bell pepper, tofu, and garlic salt in a bowl.
  2. Serve on the toasted bread slices.

Serves: 8 persons




Vegi-Tofu Dip


  • 1 cup of soft tofu
  • 1 cup of sour cream
  • 1 package of veggie dip mix


  1. Cream together all the ingredients.
  2. Refrigerate all the dip for 2 hours before serving.
