Fava bean and artichoke stir-fry

Ingredients:

  • 1 1/2 cups of fresh fava beans
  • 1 1/2 cups of fresh green peas
  • 1 1/2 cups of artichoke, peeled and chopped
  • 1 large tomato, chopped
  • salt and pepper
  • 2 tbsp of oil
  • 1/2 clove of garlic, grated
  • 1 large onion, chopped
  • 1/2 cup of white wine
  • 1/2 cup of water

Directions:

  1. Sautee the onion and garlic with the oil for 5 minutes.
  2. Add the beans, peas and artichoke and tomato.
  3. Mix and simmer for five minutes.
  4. Add the wine and water.
  5. Simmer everything for 10-15 minutes or until the vegetable are soft and the consistency of stew.

Serves: 4 persons

 

 

 

Roman artichokes

Ingredients:

  • 8 large artichokes
  • 1 lemon
  • 1 cup of olive oil
  • 1 garlic glove, grated
  • salt

Directions:

  1. Peel off the tough layers of the artichoke.
  2. Peel the tough layer of skin off on the stem but do not remove the stem.
  3. Boil about 2 inches of water in a very large pan.
  4. If possible, place a steaming rack in the bottom of the pan, otherwise add the artichokes and steam or boil them until they are very tender.
  5. Place the artichokes in a large dish and pour the oil over them.
  6. Srpinkle the artichokes with lemon and garlic.
  7. Allow them to soak ion the oil for 4 hours.
  8. Add salt just before serving.

Serves: 4 persons
