Healthy turkey burritos

Ingredients:

  • 10 soft taco shells
  • 2 hot chili peppers, chopped
  • 2 1/2 cups of turkey, boiled and shredded
  • 1 large onion, chopped
  • 1 cup of cheddar cheese, shredded
  • 1 tbsp of fresh parsley, chopped
  • salt and pepper
  • 1 tbsp of olive oil
  • 1 cup of fresh salsa

Directions:

  1. Preheat oven to 350 degrees F.
  2. Sautee the chili pepper and the onion in the oil for 2 minutes.
  3. Add the turkey and parsley and simmer for another 2 minutes.
  4. Add the turkey mix to the tacos.
  5. Add the cheese and bake the tacos in a 350-degree oven for 7 minutes.
  6. Add the fresh salsa and salt and pepper to taste.

 

 

 

Stuffed turkey breast

Ingredients:

  • 4 turkey breasts, boneless, skinless and tenderized
  • 4 stalks of asparagus
  • 4 strips of bacon
  • 4 slices of Swiss cheese
  • 1 garlic clove, grated
  • 2 eggs, beaten or egg substitute
  • parsley
  • olive oil
  • seasoned breadcrumbs
  • salt and pepper
  • toothpicks

Directions:

  1. Preheat oven to 400 degrees F.
  2. Rub the turkey breasts with olive oil and garlic.
  3. Sprinkle them with salt and pepper.
  4. On one half of the turkey breasts place the asparagus, cheese and bacon.
  5. Fold the other half over and inset a toothpick in the turkey breast to close the fold.
  6. Pass the stuffed turkey breasts in egg and breadcrumbs.
  7. Heat a 4-5 tbsp of olive oil in pan.
  8. Fry the turkey breasts until both sides are golden brown.
  9. Place them on a baking sheet and in a 400-degree oven for 10-15 minutes.

Serves: 4 persons

 

 

 

Parmesan Herb Turkey

Ingredients:

  • 1 cup freshly grated parmesan cheese, 4 ounces
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon basil
  • 1 teaspoon paprika
  • 1/2-1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/8 teaspoon garlic powder
  • 4 bone-in turkey breasts, preferably with the skin on
  • 1/2 cup butter, melted

Directions:

  1. Preheat oven to 350 degrees F.
  2. Mix parmesan cheese, parsley, basil, paprika, salt, garlic powder, and pepper in a shallow dish or pie pan.
  3. Dip the turkey in the melted butter, then coat with the Parmesan mixture.
  4. Put in a greased 10x15" baking pan.
  5. Bake 350º for 40-55 minutes, depending on the size of the breasts.
