Grilled Smothered Turkey

Ingredients:

  • 4 boneless turkey breasts
  • Salt, pepper, and desired seasonings to taste
  • Butter
  • 8 ounces fresh mushrooms, sliced
  • 1 green pepper, chopped, about 6 ounces
  • 1/2 cup onion, chopped, 2 1/2 ounces
  • 1 clove garlic, minced
  • 8 ounces cheddar cheese, shredded

Directions:

  1. Preheat oven to 350 degrees F.
  2. Flatten turkey, if desired; sprinkle with desired seasonings.
  3. Grill until done to your taste.
  4. Meanwhile, sauté mushrooms, green pepper, onion and garlic in butter until tender.
  5. Place grilled turkey on a baking sheet, cover with vegetables, then smother with cheese.
  6. Bake at 350 degrees F about 5 minutes, until cheese is melted or microwave for a minute or so.

 

 

 

Homestyle Turkey Bake

Ingredients:

  • 4 sheets heavy duty foil, 12" x 18"
  • 4 boneless turkey breasts
  • 1/2 pound mushrooms, sliced
  • 2 medium zucchini, sliced about 1/4"-1/2" thick, 14 ounces
  • 2-3 green onions, cut in 1" pieces, optional
  • Salt and pepper
  • Herbs and spices, to taste
  • 4-5 pats butter

Directions:

  1. Preheat oven to 450º F.
  2. Put 1 breast in center of each piece of foil.
  3. Season both sides of meat.
  4. Cover with vegetables; season to taste.
  5. Place pats of butter on top of the vegetables.
  6. Fold up foil to form packets, leaving room for circulation.
  7. Bake 450º for 20-24 minutes.

 

 

 

Almost Bourbon Turkey

Ingredients:

  • 8-10 boneless turkey thighs
  • 5 tablespoons soy sauce
  • 1/4 cup sugar
  • 2 green onions, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon sesame oil
  • 5 tablespoons water
  • 1/2 teaspoon molasses
  • 2 tablespoons ketchup
  • 1/8 teaspoon liquid smoke

Directions:

  1. Preheat oven to 350 degrees F.
  2. Put turkey in a gallon zipper bag.
  3. Mix remaining ingredients and pour over turkey.
  4. Seal bag, place in a baking pan and marinate in refrigerator several hours or overnight, turning bag occasionally.
  5. Cook turkey on grill or bake in a 9x13" pan at 350º for about an hour, turning turkey over every 10 minutes, until turkey is done.
