Tropical Glazed Tofu

Ingredients:

  • 1 cup of pineapple juice
  • 1/2 cup of orange juice
  • 1/2 cup of sugar
  • 1 pound of tofu, cubed

Directions:

  1. Preheat oven to 350 degrees F.
  2. Bring the pineapple and orange juice to a simmer and stir in the sugar.
  3. Stir until it has dissolved and bring the juices to a boil.
  4. Reduce the heat and simmer until they thicken.
  5. Pour the syrup over top the tofu in a baking dish.
  6. Bake the tofu in a 350-degree oven for 15-20 minutes.

 

 

 

Peach Tofu

 Ingredients:

  • 2 ripe peaches, peeled, pitted and sliced
  • 1/2 cup of raisins
  • 1 tsp of soy sauce
  • 1 tbsp of butter, melted
  • 1 lb of tofu, cubed
  • 2 tbsp of brown sugar

Directions:

  1. Preheat oven to 350 degrees F.
  2. Mix all the ingredients together in a baking dish.
  3. Bake them in a 350-degree oven for 20 minutes.

 

 

 

Citrus Glazed Tofu

 Ingredients:

  • 1 (13oz) pack of tofu, washed and chopped
  • 1/4 cup of orange juice
  • 1/2 cup of flour
  • 4 tbsp of brown sugar
  • 1 lemon, squeezed
  • 4 tbsp of olive oil
  • salt and pepper
  • rice

Directions:

  1. Coat the tofu in the flour and sauté it in the olive oil for 5 minutes.
  2. Beat together the remaining ingredients and pour them over top the tofu.
  3. Simmer until the tofu is gooey.
  4. Serve next to rice.
