Tasty Tofu Kabobs
Ingredients:
- 1 (13 oz) pack of tofu, cut in to big fat cubes
- 2 tbsp of olive oil
- salt and pepper
- 1 tbsp of cayenne pepper
- wooden skewers
- 1 zucchini, cubed
- 1 red bell pepper, cute into squares
- 1 cup of cherry tomatoes
Directions:
- Add the tofu to the skewers and alternate the vegetables.
- Rub the tofu skewers with olive oil and sprinkle them with salt, pepper and cayenne pepper.
- Place them on the grill and turn them until they are golden brown.
Grilled Tofu Pitas
Ingredients:
- 1 ( 16 oz) pack of firm tofu, sliced
- 1 medium green bell pepper, chopped
- 2 large onions, chopped
- 3 pitas, sliced open and toasted with olive oil and salt
- 1/2 cup of feta, crumbled
- 2 cups of chopped and washed lettuce
- 1/2 cup of mint, chopped
- 3 tbsp of olive oil
- 1 tsp of vinegar
- salt and pepper
Directions:
- Sautee the tofu with the onions and bell peppers in the olive oil until the tofu browns.
- Set the pitas aside, and toss the remaining ingredients with the tofu and sautéed vegetables.
- Stuff the pitas with the tofu mixture and add salt and pepper to taste.
Tofu and Corn Chowder
Ingredients:
- 8 ears of corn, husked, boiled in 6 cups of salted water and cut off the cob
- reserve the corn water
- 1 1/2 cups of basil, chopped
- 1 lbs of tofu, chopped
- 1 jalapeno pepper
- 5 scallions, chopped
- 1 tbsp of butter
- 2 tbsp of flour
Directions:
- Puree the corn and tofu together.
- Return this mixture to the corn water.
- Add the remaining ingredients and simmer for 1 hour.
- Add 1 tbsp of butter and 2 tbsp of flour to thicken.
- Add salt and pepper to taste.
