Tasty Tofu Kabobs


  • 1 (13 oz) pack of tofu, cut in to big fat cubes
  • 2 tbsp of olive oil
  • salt and pepper
  • 1 tbsp of cayenne pepper
  • wooden skewers
  • 1 zucchini, cubed
  • 1 red bell pepper, cute into squares
  • 1 cup of cherry tomatoes


  1. Add the tofu to the skewers and alternate the vegetables.
  2. Rub the tofu skewers with olive oil and sprinkle them with salt, pepper and cayenne pepper.
  3. Place them on the grill and turn them until they are golden brown.




Grilled Tofu Pitas


  • 1 ( 16 oz) pack of firm tofu, sliced
  • 1 medium green bell pepper, chopped
  • 2 large onions, chopped
  • 3 pitas, sliced open and toasted with olive oil and salt
  • 1/2 cup of feta, crumbled
  • 2 cups of chopped and washed lettuce
  • 1/2 cup of mint, chopped
  • 3 tbsp of olive oil
  • 1 tsp of vinegar
  • salt and pepper


  1. Sautee the tofu with the onions and bell peppers in the olive oil until the tofu browns.
  2. Set the pitas aside, and toss the remaining ingredients with the tofu and sautéed vegetables.
  3. Stuff the pitas with the tofu mixture and add salt and pepper to taste.




Tofu and Corn Chowder


  • 8 ears of corn, husked, boiled in 6 cups of salted water and cut off the cob
  • reserve the corn water
  • 1 1/2 cups of basil, chopped
  • 1 lbs of tofu, chopped
  • 1 jalapeno pepper
  • 5 scallions, chopped
  • 1 tbsp of butter
  • 2 tbsp of flour


  1. Puree the corn and tofu together.
  2. Return this mixture to the corn water.
  3. Add the remaining ingredients and simmer for 1 hour.
  4. Add 1 tbsp of butter and 2 tbsp of flour to thicken.
  5. Add salt and pepper to taste.
