Apricot Tofu Rice Pudding


  • 11 oz of brown rice, cooked
  • 1 lb of soft tofu
  • 1/2 tsp of cinnamon
  • 10 oz of apricots, cleaned and boiled until soft, pitted and skinned
  • 10 oz of apple juice
  • 1 1/2 tbsp of malt
  • 1 pt of water


  1. Place all the ingredients in a food processor.
  2. Blend them well.
  3. Refrigerate before serving.




Tofu Salad


  • 1 bag of pre-mixed greens
  • 1 tsp of oregano, chopped
  • 1 lb of tofu, cubed
  • 1 1/2 cups of crumbled feta
  • 1 large tomato, chopped
  • 1 cucumber, peeled and chopped
  • 2 tbsp of plain yogurt
  • salt and pepper
  • 2 tbsp of olive oil


  1. Toss together all the ingredients.
  2. Serve immediately.




Cabbage and Tofu Salad


  • 2 cucumbers, peeled and chopped
  • 1 1/2 lbs of firm tofu, cubed
  • 1 red cabbage, chopped and washed
  • 1/2 cup of onion, chopped
  • 1 1/2 tbsp of sesame oil
  • 2 tbsp of olive oil
  • salt and pepper


  1. Sautee the tofu in the sesame oil until they are brown.
  2. Toss the tofu with the remaining ingredients.
  3. Add salt and pepper to taste.
