Tofu and Red Lentil Salad

Ingredients:

  • 1/4 cup of red lentils, cooked and cooled
  • 1 onion, chopped and sautéed
  • 1 lb of firm tofu, washed and cubed
  • 6 tbsp of olive oil
  • 1 tsp of thyme, chopped
  • 1 tsp of yellow curry powder
  • 1 tbsp of cilantro, chopped
  • salt and pepper

Directions:

  1. Combine all the ingredients in a large bowl.
  2. Add salt and pepper to taste.
  3. Chill for 2 hours before serving.

 

 

 

Tofu Fruit Salad

Ingredients:

  • 1 cup of mango, peeled, pitted and cubed
  • 2 cups of firm tofu, cubed
  • 3/4 cup of orange juice
  • 1 cup of strawberries, chopped
  • 1 cup of blueberries, washed
  • 1 cup of white cantaloupe, cubed
  • 1 cup of walnuts, toasted and chopped.

Directions:

  1. Combine all the ingredients in a large bowl.
  2. Toss them well.
  3. Serve chilled.

 

 

 

Tofu Potato Salad

Ingredients:

  • 3 tbsp of olive oil
  • 1 tsp of tarragon
  • 1 1/2 lbs of red potatoes, boiled and cubed
  • 4 oz. of soft tofu
  • 1 small red onion, chopped
  • 1 tsp of parsley
  • salt and pepper

Directions:

  1. Puree all the ingredients but the onion and potatoes.
  2. Once pureed, combine wit the onions and potatoes.
  3. Add salt and pepper to taste.
  4. Refrigerate for 3 hours before serving.
