Raspberry Tofu Cheesecake

Ingredients: 

  • 1 cup of graham cracker, crushed
  • 1/2 cup of honey
  • 1/2 cup of sugar
  • 1 cup of red raspberries
  • 1/4 cup of brown sugar
  • 1/4 cup of lemon juice
  • 1 tsp of vanilla
  • 1 tsp of almond extract
  • 2 1/3 lbs of tofu

Directions:

  1. Preheat oven to 350 degrees F.
  2. Grease a pie dish and press the graham cracker to the bottom of it to form a base.
  3. Run the remaining ingredients through a blender and pour them into the pie shell.
  4. Bake the pie at 350 degrees F for 55 minutes.
  5. Allow to chill for 2 hours before serving.

Strawberry Tofu Fluff

 Ingredients:

  • 1 jar of fluff
  • 2 cups of strawberries, chopped
  • 1 cup of tofu, soft

Directions:

  1. Whip together all the ingredients in a blender until smooth.
  2. Spread on bread or sweet cakes.
