Tofu Quiche
Ingredients:
- 1 pre made pie crust
- 4 eggs, beaten
- 1 cup of sharp white cheddar cheese, shredded
- 1 tbsp of butter
- salt and pepper
- 1 cup of tofu
- 1 tsp of parsley
Directions:
- Preheat oven to 350 degrees F.
- Blend all the ingredients together and pour them into the pie shell.
- Bake the quiche at 350-degrees for 10-15 minutes.
Tasty Tofu Omelet
Ingredients:
- 1 (13 oz) pack of firm tofu, washed and cubed
- 1 cup of Monterey jack cheese
- 1 green onion, chopped, sautéed
- 1 green bell pepper, chopped, sautéed
- 1 tsp of soy sauce
- 4 eggs
- salt and pepper
Directions:
- Beat together all the ingredients.
- In a greased pan, pour the egg mixture in and simmer the eggs omelet, lightly browning it on both sides.
- Add salt and pepper to taste.
Tofu Breakfast Burritos
Ingredients:
- 4 (8 in) tortillas, warmed with steam
- 1 1/2 cups of chopped green bell pepper
- 1 onion, chopped
- 1 cup of Monterey jack cheese, shredded
- 1 (13 oz) pack of tofu, washed and cubed
- 1/4 cup of coriander, chopped
- 4 tbsp of olive oil
- 2 eggs, beaten
Directions:
- Sautee the onion, bell pepper, and coriander in the olive oil for 4 minutes.
- Add the tofu and simmer for 4 minutes.
- Add the egg and simmer until cooked.
- Place a scoop of the mixture in the center of a tortilla.
- Add a handful of cheese and roll them up.
- Place the burritos on a baking sheet and in 350-degree oven for 5 minutes.
