Mesquite BBQ Tofu
Ingredients:
- 1 1/2 lbs of tofu, cubed
- 1/2 cup of flour
- 1 bottle of BBQ sauce
- 3 tbsp of olive oil
Directions:
- Preheat oven to 400 degrees F.
- Batter the tofu in flour and sauté it in the olive oil until brown.
- Remove from the pan and place in a baking dish.
- Pour the BBQ sauce over top to tofu and mix it well.
- Place in a 400-degree oven for 15 minutes.
Sweet and Sour Tofu
Ingredients:
- 1/2 cup of orange juice
- 1 lb of tofu, cubed
- 1/2 cup of flour
- 4 tbsp of olive oil
- 1 lime
- 1 tbsp of sugar
- 1 tsp of soy
Directions:
- Batter the tofu in the flour.
- Simmer the tofu in the olive oil and sprinkle the lime juice, sugar and soy sauce over top.
- Pour the orange juice in and simmer until the tofu gets gooey.
Honey Tofu and Cheese Bake
Ingredients:
- 1 1/2 cups of feta, crumbled
- 1 cup of rice, cooked
- 1/4 cup of honey
- 1 lb of tofu, cubed
- 2 tbsp of olive oil
- 1/2 cup of black long grain rice
- salt and pepper
Directions:
- Preheat oven to 350 degrees F.
- Grease a glass baking dish.
- Add to both rices. On top of the rice, add the tofu and feta.
- Sprinkle over top the olive oil and honey.
- Add a dash of salt and pepper.
- Place the baking dish in a 380-degree oven for 16-20 minutes.
