Lemongrass Tofu
Ingredients:
- 1 tbsp of sesame oil
- 2 tbsp of soy sauce
- 1 (16 oz) pack of tofu, washed and cubed
- 2 cloves of garlic, minced
- 3 stalks of lemon grass, shredded 1 tsp of fish sauce
- 1 onion, chopped
- 1/2 cup of coriander, chopped
- 1 red bell pepper, cleaned and chopped
- rice
Directions:
- Preheat oven to 400 degrees F.
- Set the tofu aside.
- Place all the remaining ingredients and a food processor and mix them well.
- Marinate the tofu in this mixture for 4 hours.
- Pour the tofu and marinade into a baking dish.
- Place the baking dish in a 400-degree oven for 20 minutes.
- Serve next to rice.
Garlic Marinated Tofu Bake
Ingredients:
- 1 1/2 pounds of tofu
- 10 cloves of garlic, peeled and boiled
- 1/4 cup of olive oil
- 1 tbsp of white wine
- 1 tsp of sugar
- 1 tsp of sesame oil
- 1 tbsp of ginger, grated
- 1 tbsp of white vinegar
- 1 tbsp of soy sauce
- 1 onion, chopped
- 1/4 cup of water
- salt and pepper
- rice
Directions:
- Puree all the ingredients but the tofu.
- Place the tofu in a greased baking dish.
- Pour the pureed ingredients over top and mix well.
- Allow to marinate fore 3 hours, then bake the tofu in a 400-degree oven for 20 minutes.
- Serve with rice.
- Add salt and pepper to taste
Tofu Shitake Bake
Ingredients:
- 1 lb of shitake mushroom caps, cleaned and soaked in white wine for 6 hours
- 3 cloves of garlic, peeled and minced
- 1 tbsp of ginger root, minced
- 3 tbsp of honey
- 1 1/2 lbs of firm tofu, cubed
- 4 tbsp of rice vinegar
- 4 tbsp of soy sauce
- 4 tbsp of olive oil
- salt and pepper
- 3 cups of spinach
Directions:
- Drain the mushrooms. Place them in a baking dish.
- Place the spinach atop of them and finally layer the cubed tofu.
- Wisk together the remaining ingredients and pour them atop to tofu bake.
- Place the baking dish in a 400-degree oven for 18-22 minutes.
- Add salt and pepper to taste.
