Mama's Kitchen Dilemmas

Inexpensive Ovens



 

Lemongrass Tofu

Ingredients:

  • 1 tbsp of sesame oil
  • 2 tbsp of soy sauce
  • 1 (16 oz) pack of tofu, washed and cubed
  • 2 cloves of garlic, minced
  • 3 stalks of lemon grass, shredded 1 tsp of fish sauce
  • 1 onion, chopped
  • 1/2 cup of coriander, chopped
  • 1 red bell pepper, cleaned and chopped
  • rice

Directions:

  1. Preheat oven to 400 degrees F.
  2. Set the tofu aside.
  3. Place all the remaining ingredients and a food processor and mix them well.
  4. Marinate the tofu in this mixture for 4 hours.
  5. Pour the tofu and marinade into a baking dish.
  6. Place the baking dish in a 400-degree oven for 20 minutes.
  7. Serve next to rice.

 

 

 

Garlic Marinated Tofu Bake

Ingredients:

  • 1 1/2 pounds of tofu
  • 10 cloves of garlic, peeled and boiled
  • 1/4 cup of olive oil
  • 1 tbsp of white wine
  • 1 tsp of sugar
  • 1 tsp of sesame oil
  • 1 tbsp of ginger, grated
  • 1 tbsp of white vinegar
  • 1 tbsp of soy sauce
  • 1 onion, chopped
  • 1/4 cup of water
  • salt and pepper
  • rice

Directions:

  1. Puree all the ingredients but the tofu.
  2. Place the tofu in a greased baking dish.
  3. Pour the pureed ingredients over top and mix well.
  4. Allow to marinate fore 3 hours, then bake the tofu in a 400-degree oven for 20 minutes.
  5. Serve with rice.
  6. Add salt and pepper to taste

 

 

 

Tofu Shitake Bake

Ingredients:

  • 1 lb of shitake mushroom caps, cleaned and soaked in white wine for 6 hours
  • 3 cloves of garlic, peeled and minced
  • 1 tbsp of ginger root, minced
  • 3 tbsp of honey
  • 1 1/2 lbs of firm tofu, cubed
  • 4 tbsp of rice vinegar
  • 4 tbsp of soy sauce
  • 4 tbsp of olive oil
  • salt and pepper
  • 3 cups of spinach

Directions:

  1. Drain the mushrooms. Place them in a baking dish.
  2. Place the spinach atop of them and finally layer the cubed tofu.
  3. Wisk together the remaining ingredients and pour them atop to tofu bake.
  4. Place the baking dish in a 400-degree oven for 18-22 minutes.
  5. Add salt and pepper to taste.
