Tofu Enchiladas

 Ingredients:

  • 1 large onion, chopped
  • 1 lb of tofu, cubed
  • 1 cup of cheddar, shredded
  • 1 cup of Monterrey Jack, shredded
  • 1 1/2 cups of tomatoes, chopped
  • 6 soft shell tortillas
  • 1 can of green chilies, strained washed and chopped
  • 1 tbsp of fresh cilantro, chopped

Directions:

  1. Preheat oven to 350 degrees F.
  2. Assemble the Enchiladas by adding equal measure of, tofu, chilies, onion, cilantro, tomatoes and the cheeses (reserve some cheese for the end).
  3. Roll them up and place them in a non-stick baking dish.
  4. Sprinkle the remaining cheese on top.
  5. Place the baking dish in a 350-degree oven for 26 minutes.

 

 

 

Tofu Quesadillas

 Ingredients:

  • 2 cups of cheddar
  • olive oil
  • soft tortillas
  • 1 cup of soft tofu
  • salt and pepper
  • 1 cup of shredded lettuce
  • 1 cup of guacamole
  • 1 cup of tomatoes, chopped

Directions:

  1. Blend together the tofu and cheddar.
  2. Rub the tortillas with olive oil and spread the tofu/cheese mixture in between two tortillas.
  3. Sprinkle with salt and pepper and bake them in a 350-degree oven for 15-20 minutes.
  4. Cut them into wedges and serve next to the lettuce, tomato and guacamole.

 

 

 

Tacos with Tofu

 Ingredients:

  • 1 lbs of tofu, cubed and seared in olive oil and lime juice
  • 4 tbsp of sour cream
  • 4 hard shell
  • 1 cup of cheddar
  • 1 cup of salsa
  • 1/2 cup of guacamole
  • 1 onion, chopped
  • 2 chillis, chopped

Directions:

  1. Preheat oven to 350 degrees F.
  2. Assemble the tacos by adding all the ingredients evenly to the center of each taco.
  3. Bake them in a 350-degree oven for 10 minutes.
