Tofu Enchiladas
Ingredients:
- 1 large onion, chopped
- 1 lb of tofu, cubed
- 1 cup of cheddar, shredded
- 1 cup of Monterrey Jack, shredded
- 1 1/2 cups of tomatoes, chopped
- 6 soft shell tortillas
- 1 can of green chilies, strained washed and chopped
- 1 tbsp of fresh cilantro, chopped
Directions:
- Preheat oven to 350 degrees F.
- Assemble the Enchiladas by adding equal measure of, tofu, chilies, onion, cilantro, tomatoes and the cheeses (reserve some cheese for the end).
- Roll them up and place them in a non-stick baking dish.
- Sprinkle the remaining cheese on top.
- Place the baking dish in a 350-degree oven for 26 minutes.
Tofu Quesadillas
Ingredients:
- 2 cups of cheddar
- olive oil
- soft tortillas
- 1 cup of soft tofu
- salt and pepper
- 1 cup of shredded lettuce
- 1 cup of guacamole
- 1 cup of tomatoes, chopped
Directions:
- Blend together the tofu and cheddar.
- Rub the tortillas with olive oil and spread the tofu/cheese mixture in between two tortillas.
- Sprinkle with salt and pepper and bake them in a 350-degree oven for 15-20 minutes.
- Cut them into wedges and serve next to the lettuce, tomato and guacamole.
Tacos with Tofu
Ingredients:
- 1 lbs of tofu, cubed and seared in olive oil and lime juice
- 4 tbsp of sour cream
- 4 hard shell
- 1 cup of cheddar
- 1 cup of salsa
- 1/2 cup of guacamole
- 1 onion, chopped
- 2 chillis, chopped
Directions:
- Preheat oven to 350 degrees F.
- Assemble the tacos by adding all the ingredients evenly to the center of each taco.
- Bake them in a 350-degree oven for 10 minutes.
