Mama's Kitchen Dilemmas

Cranberry Tofu Sweetness

 Ingredients:

  • 1 pack of pre-made sugar cookie dough
  • 2 cups of tofu, soft
  • 2 1/2 cups of cranberries
  • 1 1/2 tbsp of corn starch
  • 3 tbsp of orange juice
  • 1 tsp of vanilla extract
  • 2/3 cup of sugar
  • 5 tbsp of water

Directions:

  1. Preheat oven to 350 degrees F.
  2. Roll out the cookie dough like a pie shell and place it in a pie dish.
  3. Bring the cranberries and remaining ingredients (except for the tofu), to a bowl.
  4. Run the cranberry mixture and the tofu through a blender on high.
  5. When the ingredients are blended smooth, pour them into the pie crust and place it in a 350-degree oven for 10 minutes.
  6. Chill the pie for 5 hours before serving.

 

 

 

Apple Cream Tofu Dessert

Ingredients:

  • 11 oz of soft tofu
  • 1 tbsp of fresh cinnamon
  • 4 tbsp of fructose
  • 2 apples, peeled, cored and chopped
  • 1 tbsp of vanilla extract

Directions:

  1. Puree all the ingredients well.
  2. Refrigerate and serve as pudding.

 

 

 

Raspberry Tofu Dream

Ingredients:

  • 12 oz of raspberries, washed
  • 1 lb of soft tofu
  • 1/2 tsp of vanilla extract
  • 3 tbsp of honey

Directions:

  1. Puree all the ingredients well.
  2. Refrigerate and serve as pudding.
