Smoke Onion Chipotle Tofu Mayonnaise
Ingredients:
- 4 1/2 oz of soft tofu
- 2 tbsp of mayonnaise
- 1 1/2 tsp of Dijon mustard
- 2 chipotle chilies
Directions:
- Run all the ingredients through the blender and puree them well.
- Keep the tofu mayonnaise refrigerated if you plan to store it for later usage.
Red Curry Tofu
Ingredients:
- 1 onion, chopped
- 2 tbsp of red curry paste
- 1 clove of garlic
- 1 can of coconut milk
- 1 lb of firm tofu, cubed
- 1 tsp of fish sauce
- 2 bags of frozen vegetables, mixed
- 1 tbsp of sesame oil
- salt and pepper
- jasmine rice
Directions:
- Sautee the onion, curry paste, fish sauce and garlic in the sesame oil for 5 minutes.
- Add the tofu and simmer another 5 minutes.
- Add the vegetables and coconut milk and simmer for another 5 minutes.
- Add salt and pepper to taste.
- Serve with jasmine rice.
Stuffed Tofu
Ingredients:
- 1 (18 oz) block of tofu, sliced
- 2 balls of mozzarella, sliced
- fresh basil leaves
- 2 tomatoes, chopped
- olive oil
- salt and pepper
Directions:
- Preheat oven to 350 degrees F.
- In between two pieces of tofu, stack mozzarella, basil leaves and a slice of tomatoes.
- Sprinkle the tofu stacks with olive oil, salt and pepper and place a tooth pick in the center of each one to keep them together.
- Bake them in a 350-degree oven for 10-15 minutes.
