Smoke Onion Chipotle Tofu Mayonnaise

Ingredients:

  • 4 1/2 oz of soft tofu
  • 2 tbsp of mayonnaise
  • 1 1/2 tsp of Dijon mustard
  • 2 chipotle chilies

Directions:

  1. Run all the ingredients through the blender and puree them well.
  2. Keep the tofu mayonnaise refrigerated if you plan to store it for later usage.

 

 

 

Red Curry Tofu

Ingredients:

  • 1 onion, chopped
  • 2 tbsp of red curry paste
  • 1 clove of garlic
  • 1 can of coconut milk
  • 1 lb of firm tofu, cubed
  • 1 tsp of fish sauce
  • 2 bags of frozen vegetables, mixed
  • 1 tbsp of sesame oil
  • salt and pepper
  • jasmine rice

Directions:

  1. Sautee the onion, curry paste, fish sauce and garlic in the sesame oil for 5 minutes.
  2. Add the tofu and simmer another 5 minutes.
  3. Add the vegetables and coconut milk and simmer for another 5 minutes.
  4. Add salt and pepper to taste.
  5. Serve with jasmine rice.

 

 

 

Stuffed Tofu

Ingredients:

  • 1 (18 oz) block of tofu, sliced
  • 2 balls of mozzarella, sliced
  • fresh basil leaves
  • 2 tomatoes, chopped
  • olive oil
  • salt and pepper

Directions:

  1. Preheat oven to 350 degrees F.
  2. In between two pieces of tofu, stack mozzarella, basil leaves and a slice of tomatoes.
  3. Sprinkle the tofu stacks with olive oil, salt and pepper and place a tooth pick in the center of each one to keep them together.
  4. Bake them in a 350-degree oven for 10-15 minutes.
