Mama's Kitchen Dilemmas

Inexpensive Ovens



 

Chicken Tofu

Ingredients:

  • 1 thick slice of tofu
  • 1 chicken breast, washed and tenderized
  • 1 glove of garlic
  • 1 thick slice of mozzarella
  • 1 cup of Italian bread crumbs
  • 1/4 cup of flour
  • 1 egg, beaten
  • salt and pepper
  • olive oil

Directions:

  1. Rub the chicken breast with olive oil and the garlic.
  2. Add the tofu and mozzarella to the center of the chicken breast.
  3. Close the breast around these ingredients, sealing it with tooth picks before breading it in the flour, egg and bread crumbs.
  4. Brown the chicken in the olive oil and place it on a baking sheet.
  5. Bake the chicken in 350-degree oven for 15 minutes.

 

 

 

Pork Flavored Tofu

Ingredients:

  • 1 lb of tofu, cubed
  • 1 pork flavored bouillon cube
  • 2 cups of boiling water
  • 1 tsp of soy sauce
  • 1 cup of basmati rice, cooked
  • 1 egg, beaten

Directions:

  1. Add the pork bouillon cube to the boiling water.
  2. When it has dissolve, reduce the heat and add the tofu.
  3. Simmer until the water has almost evaporated.
  4. Stir fry the pork flavored tofu with the cooked rice, egg and soy sauce.

 

 

 

Tuna Tofu Spread

Ingredients:

  • 4 scallions, chopped
  • 2 small carrots, shredded
  • 1 lb of soft tofu
  • 1 (12 oz) can of solid white tuna 3 tbsp of capers
  • 4 tbsp of lemon juice
  • salt and pepper

Directions:

  1. Puree all the ingredients well.
  2. Serve with toasted pita bread or keep in the refrigerator for later usage.
