Tofu Noodle Casserole

Ingredients:

  • 4 cups of spiral noodles, boiled
  • 1 lb of tofu
  • 2 tsp of onion powder
  • 2 tbsp of olive oil
  • 1 tsp of oregano
  • 2 cups of cheddar cheese, shredded
  • 1 tsp of parsley
  • salt and pepper

Directions:

  1. Mash the tofu with a fork or potato masher.
  2. Mix all the ingredients in a casserole dish and place it in a 360-degree oven for 30 minutes.
  3. Add salt and pepper to taste and sprinkle Parmesan atop if desired.

 

 

 

Tofu Pesto

Ingredients:

  • 4 tbsp of olive oil
  • 1 large bunch of fresh basil, washed
  • 1 clove of garlic
  • 1 tbsp of pine nuts
  • 1/2 (13 oz) pack of tofu, washed
  • 6 tbsp of Parmesan cheese
  • salt and pepper

Directions:

  1. Combine all the ingredients in a blender.
  2. Blend them well.
  3. Add salt and pepper to taste.
  4. Serve with spaghetti or linguini.

 

 

 

Sesame Tofu

Ingredients:

  • 1/2 cup of toasted sesame seeds
  • 1 lb of tofu, cubed
  • flour
  • 1 egg, beaten
  • 5 tbsp of olive oil
  • salt and pepper
  • 1 tsp of soy sauce

Directions:

  1. Batter the tofu in the flour, egg and sesame seeds.
  2. Brown the sesame tofu in the olive oil and add the soy sauce.
  3. Add salt and pepper to taste.
