Black Bean Fried Tofu
Ingredients:
- 1 (14 oz) pack of firm tofu, washed and chop
- 2 tsp of soy sauce
- 1 tbsp of sesame oil
- 2 hot chilies, chopped
- 2 scallions, chopped
- 2 cloves of garlic, chopped
- 1 can of black beans, washed and rinsed
- salt and pepper
Directions:
- Sautee the garlic and chilies in the sesame oil.
- Add the scallions and black beans.
- Simmer for 3 minutes.
- Add the tofu and soy sauce and simmer for 5 minutes.
- Pour the ingredients into a baking dish and place them in a 400-degree oven for 10 minutes.
- Add salt and pepper to taste, serve with rice.
Tofu Burritos
Ingredients:
- 1 lbs of tofu, cubed and seared in olive oil and lime juice
- 4 soft shell tortillas
- 1 cup of cheddar
- 1 cup of salsa
- 1/2 cup of guacamole
- 1 onion, chopped
- 2 chilies, chopped
Directions:
- Preheat oven to 350 degrees F.
- Assemble the burritos by adding all the ingredients evenly to the center of each tortilla.
- Roll them up and bake them in a 350-degree oven for 10 minutes.
Tofu Burgers
Ingredients:
- 2 eggs
- 1 cup of soft tofu
- 1 cup of vegetarian ground meat
- 1/2 cup of Italian bread crumbs
- 1/2 cup of Parmesan cheese
- salt and pepper
- tomatoes
- lettuce
- onion
- toasted hamburger buns
Directions:
- Cream together all the ingredients and for them into small patties.
- Cook them on the grill as desired.
- Serve with tomatoes, lettuce and onion on a toasted bun.
