Black Bean Fried Tofu


  • 1 (14 oz) pack of firm tofu, washed and chop
  • 2 tsp of soy sauce
  • 1 tbsp of sesame oil
  • 2 hot chilies, chopped
  • 2 scallions, chopped
  • 2 cloves of garlic, chopped
  • 1 can of black beans, washed and rinsed
  • salt and pepper


  1. Sautee the garlic and chilies in the sesame oil.
  2. Add the scallions and black beans.
  3. Simmer for 3 minutes.
  4. Add the tofu and soy sauce and simmer for 5 minutes.
  5. Pour the ingredients into a baking dish and place them in a 400-degree oven for 10 minutes.
  6. Add salt and pepper to taste, serve with rice.




Tofu Burritos


  • 1 lbs of tofu, cubed and seared in olive oil and lime juice
  • 4 soft shell tortillas
  • 1 cup of cheddar
  • 1 cup of salsa
  • 1/2 cup of guacamole
  • 1 onion, chopped
  • 2 chilies, chopped


  1. Preheat oven to 350 degrees F.
  2. Assemble the burritos by adding all the ingredients evenly to the center of each tortilla.
  3. Roll them up and bake them in a 350-degree oven for 10 minutes.




Tofu Burgers


  • 2 eggs
  • 1 cup of soft tofu
  • 1 cup of vegetarian ground meat
  • 1/2 cup of Italian bread crumbs
  • 1/2 cup of Parmesan cheese
  • salt and pepper
  • tomatoes
  • lettuce
  • onion
  • toasted hamburger buns


  1. Cream together all the ingredients and for them into small patties.
  2. Cook them on the grill as desired.
  3. Serve with tomatoes, lettuce and onion on a toasted bun.
