Sweet Thai Tilapia
Ingredients:
- 5 Tilapia fillets
- 2 tbsp olive oil
- 1 onion, chopped
- 1 can of coconut milk
- 1 red bell pepper, chopped
- 1 ½ tbsp of fish sauce
- 1 tbsp of red curry paste
- 1 tbsp of lime juice
- ½ cup of coriander
- salt and pepper
Directions:
- Simmer the onion and curry paste in a pan with the olive oil.
- Add the lime juice, coriander, fish sauce, and bell pepper.
- Simmer for 5 minutes.
- Add the fish, salt and pepper and simmer for 3 minutes.
- Add the coconut milk.
- Reduce the heat and simmer for another 5 minutes.
- Serve with rice.
Serves: 5 persons
Zesty Thai Shrimp
Ingredients:
- 1 ½ lb of jumbo shrimp, cooked and peeled
- ¼ cup of white wine
- 1 cup of diced tomatoes
- ¼ cup of sugar
- 1 tbsp of fish sauce
- 1 tbsp of lime juice
- 2 carrots, diced
- 1 green pepper, diced
- 1 tbsp of olive oil
- 3 tsp of soy sauce
- 1 clove of garlic, minced
- 1 can of pineapple chunks
- 1 jalapeño pepper, chopped
Directions:
- Sautee all the ingredients, except for the shrimp, in a large pan or wok for 5-8 minutes.
- Toss in the shrimp and stir fry for 5 minutes.
- Serve over top rice.
Serves: 4-5 persons
Sweet Thai Scallops
Ingredients:
- 2 lbs of (bay) scallops
- 2 tbsp of red curry paste
- 1 can of coconut milk
- 1 tbsp of fish sauce
- ¼ cup of lime juice
- ¼ cup of (white) vinegar
- 1 tbsp of olive oil
- 1 clove of garlic, minced
Directions:
- Simmer the vinegar, curry paste and garlic in the olive oil for 5 minutes.
- Add the scallops and sear them. At the same time, add the lime juice and fish sauce.
- Simmer 1 minute.
- Add the coconut milk and simmer for another 4 minutes.
Serves: 3-4 persons
