Thai Spinach Chicken
Ingredients:
- 2 bags of baby spinach
- 1 can of coconut milk
- ¼ cup of fresh grated ginger root
- 1 tomato, chopped
- 8 tbsp of chopped peanuts
- 2 lbs of boneless chicken
- 1 clove of garlic
- 1 onion, chopped
- 3 tbsp of sesame oil
- 1 tbsp of lime juice
- 1 tbsp of hot red pepper flakes
Directions:
- Simmer the red pepper flakes, ginger, onion, garlic, peanuts, lime and tomato in the sesame oil for 5 minutes.
- Add the chicken and simmer for another two minutes.
- Pour in the coconut milk and spinach.
- Bring to a boil. Reduce the heat and simmer for another 10-15 minutes.
- Add salt and pepper to taste.
Serves: 5-6 persons
Thai Broccoli and Pork
Ingredients:
- 2 lbs of pork loin, thinly sliced
- 6 cups of broccoli florets
- 1 cup of orange juice
- ¼ cup of vegetable broth
- salt and pepper
- 2 tbsp of vegetable oil
- 1 large onion, chopped
- ½ cup of ginger root, grated
- 1 tsp of soy sauce
Directions:
- Rub the pork with oil and salt.
- Wisk together the remaining ingredients and pour them over top the pork in a covered baking dish.
- Place the baking dish in a 350-degree oven for 40 minutes.
- Reduce the heat if the pork begins to dry out.
Serves: 5 persons
Thai Green Bean Chicken
Ingredients:
- 1 ½ lbs of chicken breast, boneless and skinless
- 1 tbsp of sugar
- 2 garlic gloves, minced
- 1 tbsp of red curry paste
- 3 tbsp of vegetable oil
- 1 bag of frozen green beans
- 3 tbsp of lime
- 1 can of olive oil
- salt and pepper
Directions:
- Mix all the ingredients together well in a baking pan.
- Place the (covered) pan in a 400-degree oven for 45 minutes.
- Reduce the heat to 300 and leave the pan in the oven for another 5-10 minutes.
- Add salt and pepper to taste.
Serves: 5 persons
