Spicy and Sour Thai Chicken Soup
Ingredients:
- 5 cups chicken broth
- 4 chicken breasts, boneless, skinless and cubed
- 1 cup of grated ginger
- 1 tsp brown sugar
- 3 stalks lemon grass, shredded
- 1 cup of cilantro, chopped
- 2 ½ limes (juiced)
- ½ cup of onion, chopped
- ¼ cup of shallots, chopped
- 1 tbsp of fish Sauce
- 2 tbsp of garlic chili sauce
Directions:
- Sautee the onions, shallots, lemon grass, garlic chili sauce and ginger in the olive oil for 4 minutes.
- Add the chicken, sugar, cilantro, lime juice and fish sauce.
- Sautee the ingredients together for 5 -7 minutes.
- Add the chicken broth and simmer on low for 25 minutes.
- Serve with rice noodles.
Serves: 4 persons
Thai Sweet and Sour Eggplant
Ingredients:
- 1 large eggplant
- 3 tbsp of olive oil
- 6 tomatoes, diced
- 4 tbsp of sugar
- 1 garlic clove, minced
- 1 pack of rice noodles
- ½ cup of vegetable broth
- 1 onion, chopped
- ¼ cup of basil, chopped
- 6 tbsp of sweet and sour chili, garlic sauce
- 2 tbsp of ginger, peeled and grated
Directions:
- Set aside the rice noodles and vegetable broth.
- Simmer the remaining ingredients in a pan for 8 minutes.
- Add the vegetable broth.
- Simmer for another 2 minutes.
- Add the rice noodles and simmer until cooked.
Serves: 4 persons
Spicy Thai Salmon
Ingredients:
- 1 ½ lbs of salmon filets
- 1 onion, sliced
- 3 tomatoes, diced
- ¾ cup of basil leaves
- salt and pepper
- 1 tbsp of sesame oil
- 1 tsp of lemon zest
Directions:
- Rub the salmon with the sesame oil, salt, pepper and lemon zest.
- Layer the basil leaves, tomato and onion a top the salmon.
- Bake or grill the salmon inside foil packets for 20 minutes or until well cooked.
Serves: 4 persons
