Thai Summer Prawn and Papaya Salad

Ingredients:

  • 2 papaya, peeled, pitted and chopped
  • 2 tomatoes, chopped
  • 1 cucumber, peeled and chopped
  • 10 prawns, cooked, peeled, cleaned and chopped
  • ¾ cup of basil, chopped
  • 1 tbsp of fish sauce
  • 2 chilies, chopped
  • 2 tbsp of vegetable oil
  • 1 tsp of soy sauce
  • 1 tbsp of toasted sesame seeds
  • 1 lime, squeezed
  • 1 pinch of salt
  • 1 tbsp of brown sugar

Directions:

  1. Toss all the ingredients well in a large glass bowl.
  2. Refrigerate for 3 hours before serving.

Serves: 4 persons

 

 

 

Easy Thai Noodle Salad

Ingredients:

  • 1 pack of Asian egg noodles, cooked
  • 2 tomatoes, chopped
  • 1 chili, chopped
  • ½ cup of basil, chopped
  • ¼ cup of lime juice
  • 3 tbsp of soy sauce
  • 2 tsp of sesame oil
  • 3 tbsp of olive oil
  • 2 shallots, chopped
  • 1 cup of coriander, chopped
  • 1 lb of shrimp, cooked, peeled and chilled
  • 1 green pepper, cleaned and chopped
  • ½ cup of fresh basil, chopped

Directions:

  1. Toss all the ingredients together in a large glass bowl.
  2. Refrigerate for 2 hours before serving.

Serves: 4-6 persons

 

 

 

Autumn Thai Salad

Ingredients:

  • 2 cups of broccoli florets
  • 4 carrots, peeled and chopped
  • 1 garlic clove, minced
  • 4 tomatoes, chopped
  • 1 bunch of coriander, chopped
  • 1 orange, peeled and chopped
  • 3 cups of green beans, chopped
  • 1 tbsp of lime juice
  • ½ cup of chopped basil
  • 1 tsp of sesame oil
  • salt and pepper
  • 4 tbsp of olive oil

Directions:

  1. Toss all the ingredients together in a large glass bowl.
  2. Refrigerate 1 hour before serving.
  3. Add salt and pepper to taste.

Serves: 5 persons
