Thai Summer Prawn and Papaya Salad
Ingredients:
- 2 papaya, peeled, pitted and chopped
- 2 tomatoes, chopped
- 1 cucumber, peeled and chopped
- 10 prawns, cooked, peeled, cleaned and chopped
- ¾ cup of basil, chopped
- 1 tbsp of fish sauce
- 2 chilies, chopped
- 2 tbsp of vegetable oil
- 1 tsp of soy sauce
- 1 tbsp of toasted sesame seeds
- 1 lime, squeezed
- 1 pinch of salt
- 1 tbsp of brown sugar
Directions:
- Toss all the ingredients well in a large glass bowl.
- Refrigerate for 3 hours before serving.
Serves: 4 persons
Easy Thai Noodle Salad
Ingredients:
- 1 pack of Asian egg noodles, cooked
- 2 tomatoes, chopped
- 1 chili, chopped
- ½ cup of basil, chopped
- ¼ cup of lime juice
- 3 tbsp of soy sauce
- 2 tsp of sesame oil
- 3 tbsp of olive oil
- 2 shallots, chopped
- 1 cup of coriander, chopped
- 1 lb of shrimp, cooked, peeled and chilled
- 1 green pepper, cleaned and chopped
- ½ cup of fresh basil, chopped
Directions:
- Toss all the ingredients together in a large glass bowl.
- Refrigerate for 2 hours before serving.
Serves: 4-6 persons
Autumn Thai Salad
Ingredients:
- 2 cups of broccoli florets
- 4 carrots, peeled and chopped
- 1 garlic clove, minced
- 4 tomatoes, chopped
- 1 bunch of coriander, chopped
- 1 orange, peeled and chopped
- 3 cups of green beans, chopped
- 1 tbsp of lime juice
- ½ cup of chopped basil
- 1 tsp of sesame oil
- salt and pepper
- 4 tbsp of olive oil
Directions:
- Toss all the ingredients together in a large glass bowl.
- Refrigerate 1 hour before serving.
- Add salt and pepper to taste.
Serves: 5 persons
