Thai Meat Salad
Ingredients:
- 1 lb of steak, cut into thinly sliced strips and seared in olive oil
- 1/4 cup fresh lime juice
- 1 tbsp of fish sauce
- 2 Tbsp minced red chili peppers
- 3 cloves garlic, crushed
- 1 onion, sliced thinly
- 1 cucumber, thinly sliced
- 2 tbsp of coriander, chopped
- 3 scallions, chopped
- salt and pepper
Directions:
- Toss all the ingredients together in a bowl.
- Refrigerate for 3 hours.
- Add salt and pepper to taste.
Serves: 4 persons
Thai Ground Beef Salad
Ingredients:
- 1 ½ lbs of ground beef
- ¼ cup of chopped coriander
- 2 tbsp of sesame oil
- 1 tbsp of mint leaves, chopped
- 1 tbsp of red curry paste
- 1 tbsp of ginger root, grated
- 1 onion, chopped
- 8 tbsp of lime juice
- 4 tsp of fish sauce
- 1 tbsp of garlic chili sauce
- 4 cups of wide rice noodles, cooked
Directions:
- Sautee all the ingredients, except for the rice noodles, in the sesame oil for 8-10 minutes.
- Add the rice noodles and toss them.
- Serve hot or cold.
Serves: 4-6 persons
Thai Chicken Salad
Ingredients:
- 4 chicken breasts, boneless, skinless, cooked and shredded
- 7 tbsp of mayonnaise
- 1/3 cup of coriander, chopped
- 1/3 cup of basil, chopped
- 1 cucumber, chopped
- 2 garlic cloves, chopped
- 1 tbsp of yellow curry powder
- 1 cup of white raisins
- 1 tbsp of lime juice
- 1 onion, chopped
Directions:
- Blend all the ingredients together extremely well.
- Refrigerate them for 2 hours before serving in sandwiches, on salad, or crackers.
Serves: 4-5 persons
