Mama's Kitchen Dilemmas



 

 

Thai Meat Salad

Ingredients:

  • 1 lb of steak, cut into thinly sliced strips and seared in olive oil
  • 1/4 cup fresh lime juice
  • 1 tbsp of fish sauce
  • 2 Tbsp minced red chili peppers
  • 3 cloves garlic, crushed
  • 1 onion, sliced thinly
  • 1 cucumber, thinly sliced
  • 2 tbsp of coriander, chopped
  • 3 scallions, chopped
  • salt and pepper

Directions:

  1. Toss all the ingredients together in a bowl.
  2. Refrigerate for 3 hours.
  3. Add salt and pepper to taste.
Serves: 4 persons

 

 

 

Thai Ground Beef Salad

Ingredients:

  • 1 ½ lbs of ground beef
  • ¼ cup of chopped coriander
  • 2 tbsp of sesame oil
  • 1 tbsp of mint leaves, chopped
  • 1 tbsp of red curry paste
  • 1 tbsp of ginger root, grated
  • 1 onion, chopped
  • 8 tbsp of lime juice
  • 4 tsp of fish sauce
  • 1 tbsp of garlic chili sauce
  • 4 cups of wide rice noodles, cooked

Directions:

  1. Sautee all the ingredients, except for the rice noodles, in the sesame oil for 8-10 minutes.
  2. Add the rice noodles and toss them.
  3. Serve hot or cold.

Serves: 4-6 persons

 

 

 

Thai Chicken Salad

Ingredients:

  • 4 chicken breasts, boneless, skinless, cooked and shredded
  • 7 tbsp of mayonnaise
  • 1/3 cup of coriander, chopped
  • 1/3 cup of basil, chopped
  • 1 cucumber, chopped
  • 2 garlic cloves, chopped
  • 1 tbsp of yellow curry powder
  • 1 cup of white raisins
  • 1 tbsp of lime juice
  • 1 onion, chopped

Directions:

  1. Blend all the ingredients together extremely well.
  2. Refrigerate them for 2 hours before serving in sandwiches, on salad, or crackers.

Serves: 4-5 persons
