Thai Curry Glaze

Ingredients:

  • 1/2 cup brown sugar
  • 1 ½ tbsp of fish sauce
  • ½ cup of rice vinegar
  • 1 ½ tbsp of red curry paste
  • ¼ cup of crushed peanuts

Directions:

  1. Wisk together all the ingredients in a pan.
  2. Place the pan on the stove and bring the sauce to a boil.
  3. Reduce the heat and simmer until the sauce thickens.
  4. Use with chicken or fish.

 

 

 

Chicken Curry Dressing

Ingredients:

  • 1/4 cup of rice wine vinegar
  • 2 tbsp of fish sauce
  • 2 tbsp of brown sugar
  • 1 tbsp of white sugar
  • 1 tbsp of red curry paste
  • 7 tbsp of roasted peanuts, crushed
  • 3 tbsp of lime juice
  • 1 cup of cilantro, chopped
  • 1 1lb of chicken breast, boiled and chopped
  • 1 tomato, chopped
  • 2 scallions, chopped

Directions:

  1. Add all the ingredients to a glass jar and shake vigorously for 2 minutes.
  2. Pour over salad.

 

 

 

Thai Green Curry Seafood Sauce

Ingredients:

  • 2 tbsp of olive oil
  • 2 tbsp of green curry paste
  • 1 cup of chopped onion
  • 1 cup of green beans
  • 1 tsp of fish sauce
  • 3 cloves of minced garlic
  • 1 pound of shrimp, peeled and deveined
  • 3 cups of tomatoes, chopped
  • 1 can of coconut milk
  • ½ cup of coriander, chopped
  • 1 tbsp of butter

Directions:

  1. Simmer all the ingredients, except for the shrimp, in a large pan for 10 minutes.
  2. Add the shrimp and simmer for another 7 minutes.
  3. Add the wine.
  4. Simmer for 3 minutes.
  5. Serve over top rice or rice noodles.

Serves: 5-6 persons
