Thai Curry Glaze
Ingredients:
- 1/2 cup brown sugar
- 1 ½ tbsp of fish sauce
- ½ cup of rice vinegar
- 1 ½ tbsp of red curry paste
- ¼ cup of crushed peanuts
Directions:
- Wisk together all the ingredients in a pan.
- Place the pan on the stove and bring the sauce to a boil.
- Reduce the heat and simmer until the sauce thickens.
- Use with chicken or fish.
Chicken Curry Dressing
Ingredients:
- 1/4 cup of rice wine vinegar
- 2 tbsp of fish sauce
- 2 tbsp of brown sugar
- 1 tbsp of white sugar
- 1 tbsp of red curry paste
- 7 tbsp of roasted peanuts, crushed
- 3 tbsp of lime juice
- 1 cup of cilantro, chopped
- 1 1lb of chicken breast, boiled and chopped
- 1 tomato, chopped
- 2 scallions, chopped
Directions:
- Add all the ingredients to a glass jar and shake vigorously for 2 minutes.
- Pour over salad.
Thai Green Curry Seafood Sauce
Ingredients:
- 2 tbsp of olive oil
- 2 tbsp of green curry paste
- 1 cup of chopped onion
- 1 cup of green beans
- 1 tsp of fish sauce
- 3 cloves of minced garlic
- 1 pound of shrimp, peeled and deveined
- 3 cups of tomatoes, chopped
- 1 can of coconut milk
- ½ cup of coriander, chopped
- 1 tbsp of butter
Directions:
- Simmer all the ingredients, except for the shrimp, in a large pan for 10 minutes.
- Add the shrimp and simmer for another 7 minutes.
- Add the wine.
- Simmer for 3 minutes.
- Serve over top rice or rice noodles.
Serves: 5-6 persons
