Ginger Chicken Soup
Ingredients:
- 4 cups of chicken broth
- 2 squirts of fish sauce
- 1 can of coconut milk
- 1 onion, chopped
- 3 tbsp of sesame oil
- 2 tbsp of lime juice
- salt and pepper to taste
- 1 large ginger root, peeled and shredded
- 2 lime leaves, pulverized
- 3 sticks of lemon grass, shredded
- 4 chicken breast, boneless, skinless and cubed
- 1 tsp of chili flakes
Directions:
- Sautee the ginger, onion, lemon grass, lime leaves, fish sauce, lime and chili flakes in the olive oil for 2 minutes.
- Add the chicken breast and simmer the ingredients for 5-8 minutes on a medium low heat.
- Add the chicken broth and salt and pepper to taste.
- Bring the ingredients to a boil.
- Reduce the heat and simmer on low for 10-15 minutes.
- Add the coconut milk 5 minutes before finishing.
Serves 4 persons
Thai Ginger Scallops
Ingredients:
- ½ cup of fresh ginger, grated
- 1/2 cup coconut milk
- 1 can of bamboo shoots
- 1 ½ lbs of scallops
- 1 tbsp of olive oil
- 1 garlic clove, minced
- 1 tsp of salt
- 1 tbsp of sugar
Directions:
- Simmer the ginger, olive oil, garlic, bamboo shoots and sugar in a min for 5 minutes.
- Add the scallops and simmer them for 6-10 minutes.
- Add the salt.
- Serve over top rice.
Serves: 4-5 persons
Thai Ginger Rice
Ingredients:
- 1 cup of jasmine rice
- 1 can of coconut milk
- 2 tbsp of brown sugar
- 1 pinch of salt
- 1 cup of vegetable stock
- ½ cup of ginger root, freshly grated
- 2 tbsp of olive oil
Directions:
- Simmer the ginger in the olive oil for 4 minutes.
- Add the rice and sauté it for 2 minutes.
- Add the remaining ingredients and bring to a boil.
- Reduce the heat and simmer on low until the liquid boils off and the rice is cooked.
Serves: 4 persons
