Mama's Kitchen Dilemmas



 

 

Thai Chicken in Green Curry  

Ingredients:

  • 2 lbs of chicken breast
  • 3 tbsp of lime juice
  • 2 ½ tbsp of green curry paste
  • 1 large ginger root, peeled and grated
  • 1 can of coconut milk
  • 1 tbsp of fish sauce
  • 3 tbsp of sesame oil
  • 1 tbsp of sugar
  • 2 onions, chopped
  • salt and pepper

Directions:

  1. Sautee the onion, ginger, curry paste, fish sauce, lime, sugar and chicken in the sesame oil for 10 minutes.
  2. Add the coconut milk and simmer for another 8-12 minutes.
  3. Add salt and pepper to taste.
  4. Serve over white rice.

Serves: 4-5 persons

Ingredients:

  • 2 lbs of chicken breast

  • 2 tbsp of red curry paste
  • 1 large ginger root, peeled and grated
  • 1 tbsp of red pepper flakes
  • 1 large red bell pepper, chopped
  • 1 can of coconut milk
  • 1 tbsp of fish sauce
  • 3 tbsp of sesame oil
  • 1 tbsp of sugar
  • 2 onions, chopped
  • salt and pepper

Directions:

  1. Sautee the onion, ginger, curry paste, fish sauce, pepper flakes, bell pepper lime, sugar and chicken in the sesame oil for 10 minutes.

Thai Yellow Curry Chicken

Ingredients:

  • 1 tbsp of fish sauce
  • 3 tbsp of yellow curry
  • 1 onion, chopped
  • 2 tsp of olive oil
  • 1/4 tbsp of chicken brother
  • 1 can of coconut milk
  • 1 ½ lbs of chicken breast, boneless and skinless
  • 6 scallions, chopped
  • 3 sweet potatoes, peeled and cubed
  • 1 tbsp of hot pepper flakes
  • salt and pepper

Directions:

  1. Simmer all the ingredients together, except for the chicken, in a large pan for 8 minutes.
  2. Add the chicken and simmer until it is well cooked.
  3. Add salt and pepper to taste.

Serves: 4-5 persons
