Thai Chicken in Green Curry
Ingredients:
- 2 lbs of chicken breast
- 3 tbsp of lime juice
- 2 ½ tbsp of green curry paste
- 1 large ginger root, peeled and grated
- 1 can of coconut milk
- 1 tbsp of fish sauce
- 3 tbsp of sesame oil
- 1 tbsp of sugar
- 2 onions, chopped
- salt and pepper
Directions:
- Sautee the onion, ginger, curry paste, fish sauce, lime, sugar and chicken in the sesame oil for 10 minutes.
- Add the coconut milk and simmer for another 8-12 minutes.
- Add salt and pepper to taste.
- Serve over white rice.
Serves: 4-5 persons
Thai Chicken in Red Curry
Ingredients:
- 2 lbs of chicken breast
- 3 tbsp of lime juice
- 2 tbsp of red curry paste
- 1 large ginger root, peeled and grated
- 1 tbsp of red pepper flakes
- 1 large red bell pepper, chopped
- 1 can of coconut milk
- 1 tbsp of fish sauce
- 3 tbsp of sesame oil
- 1 tbsp of sugar
- 2 onions, chopped
- salt and pepper
Directions:
- Sautee the onion, ginger, curry paste, fish sauce, pepper flakes, bell pepper lime, sugar and chicken in the sesame oil for 10 minutes.
- Add the coconut milk and simmer for another 8-12 minutes.
- Add salt and pepper to taste.
- Serve over white rice.
Serves: 4 persons
Thai Yellow Curry Chicken
Ingredients:
- 1 tbsp of fish sauce
- 3 tbsp of yellow curry
- 1 onion, chopped
- 2 tsp of olive oil
- 1/4 tbsp of chicken brother
- 1 can of coconut milk
- 1 ½ lbs of chicken breast, boneless and skinless
- 6 scallions, chopped
- 3 sweet potatoes, peeled and cubed
- 1 tbsp of hot pepper flakes
- salt and pepper
Directions:
- Simmer all the ingredients together, except for the chicken, in a large pan for 8 minutes.
- Add the chicken and simmer until it is well cooked.
- Add salt and pepper to taste.
Serves: 4-5 persons
