Thai Corn Flats
Ingredients:
- 1 can of corn
- 2 tsp of soy sauce
- 1 egg, beaten
- 3 tsp of red curry paste
- 4 scallions, chopped
- 1 green pepper, diced
- ¼ cup of flour
- vegetable oil
- salt and pepper to taste
Directions:
- Add to a blender the corn, curry, scallions, soy sauce and green pepper.
- Blend them well into a paste.
- Roll balls of the corn pasta into flat patties; dip them in the egg, flour, then fry them in the vegetable oil.
- Add salt and pepper to taste.
Serves: 4 persons
Thai Fish Flats
Ingredients:
- 2 lbs of any white fish
- 1 tbsp of red curry paste
- 1 egg
- 2 tsp of lime juice
- 5 tbsp of chopped basil
- 1 tsp of sugar
- 1 cup of oil
- 1 tsp of fish sauce
- 5 scallions, chopped
- 1 tbsp of hot garlic sauce
Directions:
- Heat the oil in a pan.
- Puree the remaining ingredients together and roll the puree into small balls.
- Flatten them, and fry them in the oil until brown.
Serves: 6 persons
Thai Oysters
Ingredients:
- 12 to 20 oysters, shucked and washed
- flour
- vegetable oil
- 5 tbsp of olive oil
- 1 tbsp of green curry paste
- ¼ cup of basil, chopped
- ½ cup of coriander, chopped
Directions:
- Bread the oysters in flour and fry them in the vegetable oil.
- Take the remaining ingredients and place them in a blender.
- Mix them together well and pour the mixture over top the oysters before serving.
Serve: as an appetizer
