Thai Coconut Cakes
Ingredients:
- 3 eggs
- ¼ cup of brown sugar
- 1 cup of rice flour
- 1 pinch of salt
- vegetable oil
- 1 can of coconut milk
Directions:
- Wisk together all the ingredients.
- Pour the batter into a greased iron skittle.
- Cook the batter like pancakes.
Fruity Thai Rice Cakes
Ingredients:
- 1 cup of sweet rice, cooked
- 1 cup of coconut milk
- 3 bananas, sliced
- ¼ cup of brown sugar
- 1 pinch of cinnamon
Directions:
- When the sticky rice is almost finished boiling, add the coconut milk and boil that off too.
- Spread the sticky rice on a flat surface, possibly a banana leaf or piece of wax paper.
- Sprinkle the cinnamon and sugar atop.
- Lay down the bananas and roll up the entire thing like a tort.
- Secure the tort with string.
- Refrigerate for 6 hours before removing from the wrapping and slicing.
Thai Green Tea Cake
Ingredients:
- ½ cup of canola oil
- ½ cup of coconut milk
- 1 tsp of vanilla extract
- 2 tsp of green tea powder
- 2 tsp of baking powder
- 5 eggs, separated
- 1 pinch of salt
- 1 cup of brown sugar
- 1 cup of flour
Directions:
- Beat the salt, sugar and eggs together until smooth.
- Beat in the coconut milk, oil and vanilla.
- Fold in the remaining ingredients and beat well.
- Pour the batter into a greased baking pan.
- Bake at 350-degrees for 15 minutes.
