Thai Coconut Cakes

Ingredients:

  • 3 eggs
  • ¼ cup of brown sugar
  • 1 cup of rice flour
  • 1 pinch of salt
  • vegetable oil
  • 1 can of coconut milk

Directions:

  1. Wisk together all the ingredients.
  2. Pour the batter into a greased iron skittle.
  3. Cook the batter like pancakes.

 

 

 

Fruity Thai Rice Cakes

Ingredients:

  • 1 cup of sweet rice, cooked
  • 1 cup of coconut milk
  • 3 bananas, sliced
  • ¼ cup of brown sugar
  • 1 pinch of cinnamon

Directions:

  1. When the sticky rice is almost finished boiling, add the coconut milk and boil that off too.
  2. Spread the sticky rice on a flat surface, possibly a banana leaf or piece of wax paper.
  3. Sprinkle the cinnamon and sugar atop.
  4. Lay down the bananas and roll up the entire thing like a tort.
  5. Secure the tort with string.
  6. Refrigerate for 6 hours before removing from the wrapping and slicing.

 

 

 

Thai Green Tea Cake

Ingredients:

  • ½ cup of canola oil
  • ½ cup of coconut milk
  • 1 tsp of vanilla extract
  • 2 tsp of green tea powder
  • 2 tsp of baking powder
  • 5 eggs, separated
  • 1 pinch of salt
  • 1 cup of brown sugar
  • 1 cup of flour

Directions:

  1. Beat the salt, sugar and eggs together until smooth.
  2. Beat in the coconut milk, oil and vanilla.
  3. Fold in the remaining ingredients and beat well.
  4. Pour the batter into a greased baking pan.
  5. Bake at 350-degrees for 15 minutes.
