Mama's Kitchen Dilemmas



 

 

Thai Chili Chicken

Ingredients:

  • 1 can of coconut milk
  • 2 dozen chicken wings
  • ¼ cup of chopped peanuts
  • 1 onion, chopped
  • ¼ cup of hot garlic chili sauce
  • salt and pepper
  • 1 tsp of sesame oil

Directions:

  1. Mix all the ingredients together and allow them to marinate for about 8 hours.
  2. This meal can be fried in a pan of vegetable oil, baked in a 400-degree oven for 15 minutes or grilled.
Serves: 6-8 persons

 

 

 

Thai Stuffed Chilies

Ingredients:

  • 10 fat chilies, tops cut off and cored
  • 2 garlic cloves, chopped
  • vegetable oil
  • 3 onions, chopped
  • 1 egg
  • 1 ½ cup of shrimp, cooked, peeled and chopped
  • flour
  • salt and pepper
  • 1 cup of (nearly cooked) cabbage
  • 1 tsp of fish sauce

Directions:

  1. Toss the garlic, shrimp, onions, cabbage and fish sauce together.
  2. Stuff each chili with this mixture.
  3. Roll the chilies in egg and flour.
  4. Drop them in the vegetable oil warming in a skillet.
  5. Cook until the outsides brown.

 

 

 

Thai Beef Curry and Green Peppers

Ingredients:

  • 1 lb of round beef, sliced into thin strips
  • 2 tbsp of red curry paste
  • 1 tbsp of vegetable oil
  • ½ cup of vegetable broth
  • 1 can of coconut milk
  • 1 onion, chopped
  • 1 tsp of fish sauce
  • 3 bell peppers, chopped

Directions:

  1. Sautee the onion, curry paste and bell pepper in the oil for about 5 minutes.
  2. Add the beef and simmer for 3 minutes.
  3. Add the remaining ingredients and cook for 5 minutes.
  4. Serve over top rice.

Serves: 5 persons
