Thai Chicken and Cashews
Ingredients:
- 1 cup of cashews, chopped
- 1 can of pineapple, chunked
- 2 tsp of soy sauce
- 1 tbsp of lime juice
- 1 tsp of fish sauce
- 2 onions, chopped
- 1/2 cup of coriander, chopped
- 1 green pepper, chopped
- 12 oz of chicken, ground
- 1 tsp of yellow curry paste
- 1 tbsp of hot red pepper flakes
- 3 tbsp of ketchup
- salt and pepper to taste
Directions:
- Sautee all the ingredients, except for the cashews and chicken, in a large wok for about 6 minutes.
- Add the remaining ingredients and simmer until the chicken is well cooked.
- Add salt, pepper and more lime to taste.
Serves: 5 persons
Thai Brown Sugar Chicken
Ingredients:
- 8 chicken thighs
- 4 tbsp of brown sugar
- 2 tbsp of butter
- 1 tsp of fish sauce
- 1 tsp of chili sauce
- 3 tbsp of lime juice
- 1 can of coconut milk
- 3 tbsp of yellow curry paste
- salt and pepper
- 1 clove of garlic, minced
Directions:
- Set the chicken aside.
- Wisk together all the remaining ingredients.
- Place the chicken in an olive oil greased pan.
- Pour the brown sugar curry dressing over top.
- Massage it into the chicken
Place the chicken in a 400-degree oven for 45 min to 1 hour. Add salt and pepper to taste
Lemon Grass Chicken
Ingredients:
- 4 lemon grass stalks, minced
- 5 chicken breasts, boneless, skinless and cut into strips
- 2 cloves of garlic, crushed
- 2 tsp of sesame oil
- 1 bunch of basil
- 4 tbsp of hot chili garlic sauce
- 1 tsp of fish sauce
- 1 onion, chopped
- salt and pepper to taste
Directions:
- Sautee the all the ingredients, except for the chicken, in the sesame oil for 5 minutes.
- Add the chicken and simmer until cooked.
- Add salt and pepper to taste.
Serves: 5 persons
