Split Pea Soup


  • 2 onions, chopped
  • 3 garlic cloves, chopped
  • 3 cups of split peas
  • 2 1/2 quarts of vegetable stock
  • 3 ribs of celery, chopped
  • 5 carrot, peeled and grated
  • salt and pepper
  • 1 crock pot
  • 3 tbsp of olive oil


  1. Sautee the onion, garlic, celery, and carrots in the olive oil for 7 minutes.
  2. Add them to the crock-pot.
  3. Add the remaining ingredients.
  4. Add salt and pepper to taste.
  5. Simmer on a medium heat for 20 hours.

Serves: 7-8 persons




Forest Soup


  • 2 leeks, chopped
  • 7 cups of vegetable broth
  • 3 ribs of celery, chopped
  • 1 onion, chopped
  • 1 can of cannelloni beans, strained and washed
  • 5 cups of fresh small mushrooms
  • 5 slices of bacon
  • 1/2 cup of barley
  • 2 tbsp of olive oil
  • salt and pepper


  1. Sautee the bacon, onion, celery, leeks, mushrooms and barley in the olive oil for 5 minutes.
  2. Add the beans and vegetable broth and simmer on a medium heat for 1 hour and 20 minutes.
  3. Add salt and pepper to taste.

Serves: 5-7 persons
