Rice and Pepper Soup
Ingredients:
- 1 cup of chicken stock
- 2 tbsp of flour
- 3 tbsp of fresh parsley
- 1 cup of water
- 1 tbsp of butter
- 1 1/2 cups of carrots, chopped finely
- 1/4 cup of almonds, chopped
- 1 onion, chopped
- 1 green bell pepper, chopped
- salt and pepper
- 1 cup of wild rice, cooked
- 1 celery stalk, chopped
Directions:
- Melt the butter in a deep pan and sauté the almonds, carrots, bell pepper, onion, celery and parsley.
- Add the remaining ingredients and simmer for 20 minutes.
- Add salt and pepper to taste.
Serves: 4 persons
C-better Carrot Soup
Ingredients:
- 3 1/2 pounds of carrots, peeled and chopped
- 6 cups of chicken stock
- 2 garlic cloves, chopped
- 1 celery stalk, chopped
- 1 tsp of salt
- 2 tbsp of butter
Directions:
- Bring all the ingredients to a boil.
- Reduce the heat and simmer for 25-35 minutes.
- Add the soup to a blender and blend well.
Serves: 4 – 5 persons.
