Rice and Pepper Soup

Ingredients:

  • 1 cup of chicken stock
  • 2 tbsp of flour
  • 3 tbsp of fresh parsley
  • 1 cup of water
  • 1 tbsp of butter
  • 1 1/2 cups of carrots, chopped finely
  • 1/4 cup of almonds, chopped
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • salt and pepper
  • 1 cup of wild rice, cooked
  • 1 celery stalk, chopped

Directions:

  1. Melt the butter in a deep pan and sauté the almonds, carrots, bell pepper, onion, celery and parsley.
  2. Add the remaining ingredients and simmer for 20 minutes.
  3. Add salt and pepper to taste.

Serves: 4 persons

 

 

 

C-better Carrot Soup

Ingredients:

  • 3 1/2 pounds of carrots, peeled and chopped
  • 6 cups of chicken stock
  • 2 garlic cloves, chopped
  • 1 celery stalk, chopped
  • 1 tsp of salt
  • 2 tbsp of butter

Directions:

  1. Bring all the ingredients to a boil.
  2. Reduce the heat and simmer for 25-35 minutes.
  3. Add the soup to a blender and blend well.

Serves: 4 – 5 persons.
