Creamy Potato Soup

Ingredients:

  • 6 medium sized baking potatoes
  • ½ cup instant potato flakes
  • 3 cups reduced fat milk (2% or 1% works well)
  • 2 tsp. basil
  • 2 ham flavored bullion cubes
  • 4 cups water

Directions:

  1. Cut potatoes into slices no bigger than 1 inch in diameter.
  2. Place potatoes in a pot with water and milk.
  3. Simmer until potatoes are soft.
  4. Add the potato flakes, basil, and ham flavored bullion cubes to the potato mixture.
  5. Continue to simmer until liquid is creamy in consistency.

 

 

 

Turnip Soup

Ingredients:

  • 3 white turnips
  • ½ cup flour
  • 3 cups milk
  • 2 tsp. garlic salt

Directions:

  1. Slice turnips into slices no bigger than 1 inch in diameter. Boil until soft.
  2. In a separate pan, heat milk and slowly add flower until a thin past forms.
  3. Add milk mixture to turnips. (Keep turnips in their cooking water).
  4. Add garlic salt and stir.
  5. Heat mixture until liquid is creamy.
