Parmesan and Pea Soup


  • 1 red onion, chopped finely
  • 3 cups of peas, fresh or frozen
  • 1 cup of rocket salad
  • 2 tbsp of olive oil
  • 3 cups of vegetable stock
  • 1 cup of Parmesan, shaved


  1. Cook the onions in the oil in a large pan for 5 minutes.
  2. Add the rocket and peas and simmer for 3 minutes.
  3. Add the vegetable stock and 1 cup of water.
  4. Bring the soup to a boil and reduce the heat.
  5. Simmer for 25-30 minutes.
  6. Allow the soup to cool before blending it in a food processor on high.
  7. Garnish the soup with the shaved Parmesan.

Serves: 4 persons




Sweet Potato Soup


  • 3 tbsp of butter
  • 4 cups of sweet potato, cubed
  • 3 cups of vegetable stock
  • 1 white onion, chopped
  • 1 cup of cream
  • salt and pepper


  1. Add the butter and onions in a pan and simmer for 4 minutes.
  2. Add the sweet potato and simmer for 4 minutes.
  3. Add the vegetable stock and bring the soup to a boil.
  4. Reduce the heat and simmer the soup for 25-30 minutes.
  5. Cool the soup before blending in a food processor on high.
  6. Place the soup back in the pot and reheat.
