Oyster Stew

Ingredients:

• 32 oz. oysters, washed and drained
• ½ c. butter (not margarine)
• 2 quarts of Milk
• Salt to taste
• Pepper to taste
• Paprika to taste

Directions:

1. Melt butter in large saucepan.
2. Add oysters to butter and cook just until edges of oysters start to curl (about 3 minutes).
3. Add milk, salt, pepper, and paprika.
4. Bring to a low boil.
5. Serve immediately with oyster crackers.

Potato Soup

Ingredients:

• 8 large potatoes, cooked and cubed
• 1 large onion chopped
• Milk
• Butter
• Salt & pepper to taste

Directions:

1. Put potatoes, onion, salt and pepper, ½ stick of margarine, and 2 cups of milk in large pan and heat to almost boiling.
2. Cook potato mixture for 30 minutes on medium heat.
3. Add enough milk to the mixture to keep from burning.
4. Continue cooking and adding milk until soup is desired consistency.
