Seafood Cous Cous
Ingredients:
- 3 small octopuses, cooked, cleaned and diced
- 1 large onion
- 3 tbsp of olive oil
- 1 tsp of oregano
- 10 cherry tomatoes, diced
- 2 cups of cous cous
- 2 cups of salted boiling water
Directions:
- In a pan heat oil and add the onion, oregano and tomatoes.
- Allow to simmer for 5 minutes.
- Add the octopus and cover.
- Simmer for another 5 minutes on a medium heat.
- Pour cous cous into a bowl.
- Add boiling water and the octopus and tomato mixture.
- Stir and allow to cool for 5 minutes.
Serves: 4 persons
Seafood Medley Pasta
Ingredients:
- 20 small clams, closed
- 3 prawns, raw
- 1 octopus, cooked, cleaned and cut into small pieces (optional)
- 4 cherry tomatoes, halved
- 1 packet of spaghetti
- 4 tbsp of freshly chopped parsley
- 3 cloves of garlic, quartered
- 3 tbsp of olive oil
Directions:
- Prepare a pot of salted boiling water.
- In a large pan, on medium heat, add oil and garlic.
- Simmer for 1 minute.
- Add the clams prawns, octopus (optional) and parsley and tomatoes.
- Simmer until the clams open and the pawns are cooked.
- Drop the spaghetti in the boiling water.
- Boil for 9-11 minutes.
- Strain the spaghetti, place in a bowl and pour the seafood and juices over top.
- Toss and serve immediately.
Serves: 3 persons
