Salmon Salsa

Ingredients:

  • 3-4 salmon steaks, cooked and torn into small pieces
  • 2 large pieces of smoked salmon cut into pieces
  • 1 tbsp of parsley
  • 1 scallion, chopped
  • 2 tbsp of olive oil
  • 3/4 cup of yogurt
  • 1 tbsp of melted butter
  • 1/2 lemon (squeezed)
  • salt and pepper

Directions:

  1. Preheat oven to 350 degrees F.
  2. Combine all the ingredients in a large bowl and mix them well.
  3. Scoop helpings of the salmon into small baking ramekins.
  4. Place the ramekins on a baking sheet and put them in a 350-degree oven for 10-15 minutes.

Serves: 4 persons

 

 

 

Salmon and Onion Stuffed Potatoes

Ingredients:

  • 4 large potatoes, boiled, halved and hollowed-out
  • 1 onion, chopped
  • 2 tbsp of milk
  • 2 fresh salmon steaks, diced
  • salt and pepper
  • 2 tbsp of olive oil
  • 3 tbsp of yogurt

Directions:

  1. Mix the left over potato with the onion, milk, salmon, olive oil and yogurt.
  2. Add salt and pepper to taste.
  3. Mix the ingredients well and scoop the mixture back into the potato shells.
  4. Heat the oven to 350 degrees.
  5. Place the stuffed potatoes on the baking sheet and in the oven for 10-15 minutes.

Serves: 4 persons
