Lemon-pepper Halibut

Ingredients:

  • 1/4 tsp. salt
  • 1/4 tsp. grated lemon or lime peel
  • 1/8 tsp. pepper
  • 1 lb. halibut steaks, thawed
  • 2 tbsp. lemon or lime juice
  • 1 tbsp. melted butter or margarine

Directions:

  1. Combine salt, lemon peel and pepper; sprinkle over halibut.
  2. Place fish in a shallow, greased microwave dish, drizzle with the melted butter or margarine and lemon juice.
  3. Cover with waxed paper.
  4. Microwave on high for 2 minutes or until fish flakes easily.

 

 

 

Shrimp and Veggies

Ingredients:

  • 1 to 3 lbs. shrimp, cleaned
  • Broccoli
  • Summer squash
  • Zucchini
  • Mushrooms
  • Cherry tomatoes
  • 2 tbsp. margarine
  • Disposable baking pan

Directions:

  1. Cut vegetables into bite-size pieces.
  2. Put shrimp, vegetables, margarine, and a dash of salt and pepper into pans.
  3. Cover with two layers of aluminum foil.
  4. Put on low grill with cover down.
  5. Cook about 35 minutes.

Serves 6 to 8 persons
