Spicy Ginger Salmon

Ingredients:

  • 2-4 salmon steaks
  • 1 large ginger root, grated
  • sea salt and pepper
  • olive oil

Directions:

  1. Prepare the grill or set the oven at 350 degrees
  2. Rub the salmon steaks with oil and ginger.
  3. Place clumps of grated ginger on top of the steaks.
  4. Sprinkle with pepper and sea salt. Allow to marinate for 10 minutes.
  5. Place the steaks on the grill or in the oven for 7-12 minutes.

Serves: 2-4 persons

 

 

 

Fish Shish Kebabs

Ingredients:

  • 4 calamari, halved
  • 2 salmon steaks, cut into 8 pieces each
  • 2 cuts medium cuts of halibut or trout, cut into 8 pieces each
  • 4 large shrimp
  • 1 bell pepper, cut into quarter-sized squares
  • sea salt and pepper
  • lemon
  • paprika
  • 4 wooden skewers
  • olive oil

Directions:

  1. Rub oil on all the fish, calamari, shrimp, peppers and the wooden skewers.
  2. Sprinkle sea salt, pepper and lemon juice on the fish, shrimp and bell peppers.
  3. Stab pieces of fish, calamari, shrimp and bell peppers onto the skewers.
  4. Place the skewers on a grill or in the oven at 250 degrees until the salmon begins to flake or about 10-15 minutes.
