Fish Sauce

Ingredients:

  • 5 carrots, chopped in a food processor
  • 6 scallions, chopped in a food processor
  • 1 clove of garlic
  • 1/2 cup of olive oil
  • 1 tsp of thyme
  • 1 tsp of flour
  • 2 tsp of salt
  • 1 tsp of pepper

Directions:

  1. Add all ingredients into a blender.
  2. Blend on a high speed for 2 minutes.
  3. Refrigerate the sauce before serving it over fish.

 

 

 

Greek Squid Salad

Ingredients:

  • 1 squid, boiled, cleaned and cut into pieces
  • 1 large potato, boiled and cubed
  • 3 cloves of garlic, chopped
  • 2 tsp of parsley
  • 1 tbsp of oregano
  • 4 basil leaves, chopped
  • 4 tbsp of olive oil
  • 1/2 lemon (juice)
  • salt and pepper

Directions:

  1. Combine all ingredients in a bowl.
  2. Add salt and pepper to taste.
  3. Refrigerate for 2 hours before serving.

Serves: 2-3 persons
