West Indies Pepper Sauce

Ingredients:

  • 1 tsp of nutmeg
  • 1 tsp of ground black pepper
  • 1 cup of olive oil
  • 1 cinnamon stick
  • 1 tsp of hot pepper flakes

Directions:

  1. Steep the spices in the olive oil for 1 week.
  2. Use as a dipping sauce to spice up breads.

 

 

 

Chipotles Sauce

Ingredients:

  • 1 cup of chipotle onions, chopped
  • 1/2 cup of white wine
  • 1/2 cup of cream
  • 3 tbsp of olive oil
  • 1 tbsp of flour
  • salt and pepper to taste

Directions:

  1. Sautee the chipotles in the olive oil for 2 minutes.
  2. Slowly incorporate the white wine, cream, olive oil, and flour.
  3. Stir mixture constantly over a medium heat until the sauce thickens.
  4. Add salt and pepper to taste.
  5. Serve with hot sandwiches.

 

 

 

Hot Smoke Sauce

Ingredients:

  • 1 cup of smoked sausages, diced
  • 1 cup of smoked onions
  • 3 tbsp of olive oil
  • 1/2 package of cream cheese
  • 1 tsp of red pepper flakes
  • 1/4 cup of heavy cream
  • salt and pepper to taste

Directions:

  1. Puree all the ingredients.
  2. Add mixture to a pot or fondue pot and keep them on warm.
  3. Serve with breads, meats and cheeses.
