Roux Sauce

Ingredients:

  • 4 tbsp of butter
  • 3 tbsp of flour
  • 2 tbsp of pureed red bell pepper

Directions:

  1. Beat butter, flour and pureed red bell pepper together in a pan over medium heat until the sauce browns slightly.
  2. Add slat and pepper to taste.

 

 

 

Moroccan Pepper Sauce

Ingredients:

  • 1 green bell pepper, chopped
  • 1 onion, chopped
  • 2 tbsp of olive oil
  • 2 cups of beef stock
  • 1 tbsp of butter
  • 1 hot pepper, chopped
  • 1 tbsp of red curry
  • salt and pepper

Directions:

  1. Simmer all the ingredients until the peppers are soft.
  2. Pour the sauce over top cous cous.

 

 

 

Louisiana Hot Sauce

Ingredients:

  • 2 tbsp of olive oil
  • 2 tbsp of hot mustard
  • 1 tsp of cayenne pepper
  • 1 hot chili, chopped
  • 1 tbsp of hot pepper flakes
  • 2 tbsp of garlic chili hot sauce
  • 1 can of whole peeled tomatoes
  • salt and pepper
  • 1 tbsp of maple syrup

Directions:

  1. Puree all the ingredients together.
  2. Refrigerate or warm on the stove if desired.
  3. Add salt and pepper to taste.
