Red Clam Sauce


  • 1 can of clams, minced
  • 1 cup of onion, chopped
  • 4 garlic cloves, chopped
  • 4 tbsp of olive oil
  • 1 tsp of basil
  • 1 tsp of hot pepper flakes
  • 1 can of tomato paste
  • 1/2 cup of white wine


  1. Sautee the garlic and onion in the olive oil for 5 minutes.
  2. Add the remaining ingredients and simmer them on low for 8-10 minutes.
  3. Toss the sauce with pasta.




Rum Sauce


  • 1/2 tsp of run extract
  • 2-3 tbsp of butter
  • 2 cups of milk
  • 1/2 cup of sugar
  • 3 tbsp of corn starch
  • 1 tbsp of corn syrup


  1. Simmer all the ingredients for 3 minutes.
  2. Reduce the heat and cook for another 4-6 minutes.
  3. Serve with sweet breads or cakes.




Scallion Sauce


  • 1 cup of chopped scallion
  • 1/2 cup of white wine
  • 1/2 cup of cream
  • 3 tbsp of olive oil
  • 1 tbsp of flour
  • salt and pepper to taste


  1. Sautee the scallions in the olive oil for 2 minutes.
  2. Slowly incorporate the remaining ingredients.
  3. Stir them constantly over a medium heat until the sauce thickens.
  4. Add salt and pepper to taste.
  5. Serve with hot sandwiches.
