Mama's Kitchen Dilemmas

Marshmallow Sauce 

Ingredients:

  • 1/2 tsp of vanilla
  • 3/4 cup of sugar
  • 2 egg whites
  • 2/3 cup of corn syrup
  • 1/4 cup of light brown sugar

Directions:

  1. Over heat in a pan, dissolve the sugar, vanilla and corn syrup.
  2. Whip the eggs whites until they are stiff.
  3. Slowly add the syrup mixture while the eggs are beating.
  4. Serve with pies and fruit.

 

 

 

Mango Salsa

Ingredients:

  • 2 mangos, peeled, pitted and diced
  • 1 red onion, chopped
  • 1 jalapeno pepper, chopped
  • 1 red bell pepper, chopped
  • 3 tbsp of olive oil
  • 4 tbsp of orange juice
  • salt and pepper

Directions:

  1. Combine the ingredients in a glass bowl and refrigerate them for 2 hours.
  2. Serve the salsa with chicken.

 

 

 

Currant Jelly Sauce

Ingredients:

  • 3 tbsp of currant jelly
  • 1 tbsp of butter
  • 1 cup of heavy cream
  • 2 tbsp of confectioner’s sugar

Directions:

  1. Simmer the ingredients in a pan over a medium heat for 8 minutes.
  2. Stir constantly.
  3. Serve with pound cake of toasted English muffins.
