Mama's Kitchen Dilemmas

Egg Sauce

Ingredients:

  • 6 egg yolks
  • 5 tbsp of Parmesan
  • 1 tbsp of heavy cream
  • 1 tsp of salt
  • 1 tsp of pepper
  • 2 tbsp of bacon bits

Directions:

  1. Whip the ingredients together.
  2. Set the sauce in the refrigerator until ready to use.
  3. To use: pour the sauce over pasta noodles while they’re still boiling hot.
  4. Stir and serve.

 

 

 

Eggplant Sauce

Ingredients:

  • 4 cups of eggplant, cubed, salted, rinsed
  • 1 can of whole peeled tomatoes
  • 2 garlic cloves, chopped
  • 5 tbsp of olive oil
  • 1/2 cup of water
  • salt and pepper
  • 1 cup of mozzarella

Directions:

  1. Sautee the eggplant and garlic in the olive oil until they are brown.
  2. Add the tomatoes and water.
  3. Simmer on low for 10-12 minutes.
  4. Add the mozzarella and serve over pasta.

 

 

 

Teriyaki Sauce

Ingredients:

  • 1/4 cup of olive oil
  • 1 small bottle of soy sauce
  • 6 garlic cloves, minced
  • 1/2 cup of brown sugar
  • 1 tbsp of orange zest

Directions:

  1. Combine all the ingredients and mix them well.
  2. Refrigerate the sauce until ready to use.
