Mama's Kitchen Dilemmas

Bechamel Sauce

Ingredients:

  • 1 3/4 cup of heavy milk
  • salt and pepper to taste
  • 1/4 cup of butter
  • 4-6 tbsp of all purpose flour

Directions:

  1. Melt the butter in a pan and wisk the remaining ingredients in.
  2. Stir until the sauce thickens.
  3. Add some Parmesan cheese if desired.

 

 

 

Beer Sauce

Ingredients:

  • 1 cup of milk
  • 1 (6 oz) beer
  • 1 tsp of Worcestershire sauce
  • 3 cups of vegetable broth
  • 4 tbsp of butter
  • 1/2 cup of flour
  • 2 cups of cheddar cheese

Directions:

  1. Mix all the ingredients well and melt them together in a pan over medium low heat.
  2. Serve warm.

 

 

 

Hollandaise Sauce

Ingredients:

  • 3 egg yolks
  • 3 tbsp of butter
  • 1/4 cup of heavy cream
  • 1 tbsp of lemon or lime juice
  • salt and pepper
  • paprika (optional)
  • 1/4 tsp of cayenne pepper

Directions:

  1. Beat together the ingredients and heat them in a pan slightly for 2 minutes on a low heat.
  2. Add slat and pepper to taste.
