Mama's Kitchen Dilemmas

Amatriciana Sauce

Ingredients:

  • 1 onion, chopped
  • 1 fat slice of pancetta, diced
  • 1 can of peeled tomatoes
  • 1 tsp of hot pepper flakes
  • 3 tbsp of butter
  • 1 tbsp of olive oil

Directions:

  1. Sautee the onion in the butter and oil until it is caramelized.
  2. Remove it from the pan, set it aside.
  3. Add the pancetta to the pan and the remaining ingredients.
  4. Simmer until the tomatoes fall apart.
  5. Add the onions and simmer for another 2 minutes.
  6. Toss the sauce with Bucatini pasta.

 

 

 

Pesto

Ingredients:

  • 1/2 cup of Parmesan
  • 2 bunches of basil
  • 3 tbsp of pine nuts
  • 1 anchovy
  • 1/2 cup of olive oil
  • salt and pepper

Directions:

  1. Puree all the ingredients into a paste.
  2. Serve with spaghetti.

 

 

 

French Dressing Sauce

Ingredients:

  • 2 carrots, peeled and boiled
  • onion, chopped
  • 1 bell pepper, chopped
  • salt and pepper
  • 1 cup of mayonnaise
  • 1 tbsp of pine nuts
  • 1 tbsp of lemon juice

Directions:

  1. Puree all the ingredients and whip them together in a bowl, adding salt and pepper to taste.
  2. Refrigerate for 1 hour.
