Wild Rice Salad

Ingredients:

  • 3 c. cooked wild rice
  • ¼ c. slivered almonds
  • ¼ c. chopped celery
  • 3 tbsp. balsamic vinegar
  • ¼ c. chopped Granny Smith apple

Directions:

  1. Mix all ingredients except for vinegar.
  2. Toss in vinegar and let marinate for 15 minutes before serving.

 

 

 

Cold Spaghetti Salad

Ingredients:

  • 12 oz. thin spaghetti noodles, cooked and drained
  • 16 oz. Italian dressing
  • 2 to 3 medium chopped tomatoes
  • 1 red onion, chopped
  • ½ c. chopped black olives
  • 1 c. grated fat-free Parmesan cheese

Directions:

  1. Combine all ingredients and marinade overnight in a large bowl.

Serve cold
