Wonderful Walnut Salad

Ingredients:

  • 2 cups of plain yogurt
  • 1/2 cup of white raisins
  • 1/2 cup of mint leaves, chopped
  • 1 1/2 cloves of garlic, chopped
  • 1/4 cup of basil, chopped
  • salt and pepper
  • 1 cup of toasted chopped walnuts
  • 2 cucumbers, peeled an sliced
  • 1/4 tsp of dill
  • 4 radishes, chopped

Directions:

  1. Toss all the ingredients together in a large glass bowl.
  2. Serve chilled over salad or along side fish.

 

 

 

Spicy Fruit Salad

Ingredients:

  • 2 cups of pineapple, chopped
  • 2 cups of organic strawberries, washed and halved
  • 2 cups of organic blueberries
  • 2 cucumbers, peeled and sliced
  • 3 mangos, peeled, pitted and cubed
  • 3 kiwi, peeled and cubed
  • 1 small piece of ginger root, peeled and grated
  • 3 limes, juiced
  • 1/4 cup of honey
  • 1 tsp of chili powder
  • 1 jalapeno pepper, chopped finely

Directions:

  1. Toss all the ingredients together in a glass bowl.
  2. Serve chilled.
